These oat cookies from Deliciously Ella provide long lasting energy, contain only wholesome ingredients and are a winner to snack on ahead or after a swim. Make a big batch and freeze them and pull a couple out as you need them. They are a cinch - I make them with my two year old daughter (and have to factor in the shrinkage from her eating the mixture!).
270g of oats
4 ripe mashed bananas (about 500g)
3 tablespoons of honey (or substitute with melted coconut oil)
150g of sultanas
4 red apples (about 550g), grated and liquid squeezed out
2 teaspoons of cinnamon
Preheat oven to 200C. Mix all ingredients well. Dollop spoonfuls onto a baking sheet and flatten to a cookie shape. Bake for about 30 minutes or until golden brown.
